I love simple treats. What gets easier than Rice Krispie treats? Maybe Rice Krispie Treats with peanut butter and smeared with melted chocolate chips and butterscotch chips!! yummy.
I set out to make these treats and I knew they were called Scotcheroos- that’s what we called them when I worked in a college residence hall back in the day. I looked up the recipe and realized these were not made like the traditional Rice Krispie Treats. I forgot that point! The recipe called for corn syrup …which I had none of and no marshmallows!! So I spent some time googling and found a recipe that was just a modified traditional Rice Krispie treat recipe calling for the addition of 1/2c creamy peanut butter and I stole the topping recipe from the Scotcheroo recipe.
How easy is that?
Melt 3 TBSP of butter and add 4cups of mini marshmallows
Melt over low heat stirring constantly. Remove from heat
Stir in 1/2cup creamy peanut butter
Stir in 6 cups of Rice Krispie Treats
Press in a 9 x 13 pan
Melt 1cup of chocolate chips and 1 cup of butterscotch chips over low heat and spread over the top of treats. I placed the pan in the fridge to set!
A great afterschool treat or a dessert that wont heat up the kitchen during the last remaining heat wave of Summer….maybe
Now don’t these plates make this dessert truly look like they stepped out of 1965?? They are Texasware melmac plates and the color is just awesome!! I have them for sale at my Etsy store and if no one buys them I am gonna keep them just to stare at- love them!!!
