Fathers Day mock Cannoli

Let me preface this post by saying that I make no attempt in passing this off as a true authentic cannoli…..because the result is not.  But the result is totally easy, delightful, fun for the kids and completely acceptable hand held dessert!     My husband loves cannoli but I didnt plan ahead and I knew I was not going to be able to find cannoli shells.  At that moment I remembered an piece I saw in an issue of Food Network’s magazine where they used sugar ice cream cones as the shell.   So that is what I did!

I melted some of the mini chocolate chips I had flowing out of my cabinets and filled poured some in each sugar cone- I then used the back of  a spoon to spread it inside the cone to coat well.  any excess just sank to the bottom of the cone.  I then threw them in the fridge.

I made up a Ricotta filling from several I saw on the internet and if I would have had an orange in my possession I would have zested it and added th zest for that extra bit of originality!

So here is the recipe for 4 Mock Cannolis :

4 Sugar Ice Cream cones

Approx 1/4 cup of melted chocolate of your choice- I used semi sweet

Melt chocolate and coat inside of sugar cones and chill.

Filling:

1 cup  Whole Milk Ricotta Cheese

1/4 cup granulated sugar

1/2 tsp Vanilla extract

1/4 tsp Almond extract

Mini chocolate chips

Mix Ricotta, sugar, and extracts- (you could also add chocolate chips to filling – be my guest!)  Fill your chocolate lined sugar cones and dip the end in mini chocolate chips for decoration

Chill.  then enjoy!  This is so easy
