Halloween Cupcakes

Monster and Mummy cupcakes

These are the cupcakes I made over the weekend to take to work.  I made the cupcakes from scratch using this recipe I found on Epicurious.com (Ganache Filled Cupcakes with Seven Minute Meringue)    I just didn’t make the complicated filling and ganache that went with them……: I will save that for another day.

  • 1 3/4 cups all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 3/4 cups sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup hot water
  • 1 1/4 cups bittersweet chocolate chips (about 7 1/2 ounces; do not exceed 61% cacao)

For cupcakes:
Preheat oven to 350°F. Line two 12-cup standard muffin pans with paper liners. Sift flour, cocoa powder, baking soda, and salt into medium bowl. Using electric mixer, beat sugar and butter in large bowl until light and fluffy, about 2 minutes. Add eggs 1 at a time, beating until well incorporated after each addition. Beat in vanilla, half of flour mixture, then 1 cup hot water. Add remaining flour mixture; beat just until blended. Let batter stand until cooled and slightly thickened, about 5 minutes. Stir in chocolate chips. Divide batter among muffin papers (about 1/4 cup batter each).

Bake cupcakes until tester inserted into center comes out with some crumbs attached, 22 to 25 minutes. Cool cupcakes completely in pans.

I also used a canned frosting from the store- I had heard that it took coloring really well and it sure did.  I happened to have some gel food coloring that I had purchased for some unknown reason..I cannot remember why I would have blue coloring on hand, and it had never been opened??!  Well I finally got to use it on these cupcakes!    I also bought myself a tub of fondant at Michaels craft store.  The lady in the store said the Duff’s brand gets rave reviews on taste.   He’s the guy from “Charm City Cakes” and has his own show…..Well, I am really not a fondant fan so improving its taste sounded like a good thing!  

These cupcakes were easy to make and decorate but I did find that having a pizza cutter, a good pair of kitchen shears and a skewer made things easy. Other than that, no real strange equipment required!  I also made a trip to the bulk candy store and purchased candies that I thought would make good decorations for monster faces!  It was hard to figure out what I was looking for but I just browsed and chose some pretty bright colored candies.

I used the skewer to dip into black frosting and “paint” the pupils on the eyeballs.  I would have preferred to buy ready made eyeballs- but they were sold out.  Oh well, it really was not that hard to do-just required a steady hand!

I hope the adults in the office dont mind eating blue icing! :)
