Coconut Cream Easter Cookie

I have made this coconut cookie for the past 3 Easters and it seems to be the only way my kids (who are not really kiddies anymore) like coconut.  These are sweet and creamy with the necessary addition of chocolate, and they make a pretty presentation in an Easter basket or on your Easter table.  Need a simple dessert that will please the kiddies and might impress the mother-in-law (depending on her mood)? This cookie might work!

Original recipe is from the back of a bag of Hersheys Easter themed Kisses;  I did a quick search and couldn’t find this recipe on the site anymore….you might have better luck, I get distracted very easily.

Coconut Cream Macaroons

1/3 cup unsalted butter

1 3oz package of cream cheese, softened

3/4 cup granulated sugar

1 egg yolk

2 tsp of almond extract

2 tsp of orange juice

1 1/4 cup all purpose flour

2 tsp baking powder

1/4 tsp salt

5 cups of sweetened coconut flakes-divided

48 Hersheys brand Kisses  or some other Easter themed candy-maybe egg shaped to make cookie nests.

Coconut curd- optional as a filling for a “nest” shaped cookie

In mixer fitted with paddle attachment, beat butter, cream cheese and sugar until well blended.  Add egg yolk, almond extract and orange juice, beat well.  In separate bowl, stir together flour, baking powder and salt; gradually add to butter mixture, beating until well blended.   Stir in 3 cups of coconut.  Cover and refrigerate for 1 hour or until firm.

Heat oven to 350 degrees and unwrap the Kisses so you are ready (you can eat a few too)

Shape dough into 1 inch balls- I use a cookie scoop here.  Roll cookie into remaining coconut and place on parchment/silicone lined or ungreased cookie sheet.

I had a system going where I would scoop the dough, drop in coconut and roll, then placed on a plate. I didn't bake them all that night so I froze the rest.

Bake 10-12 minutes or until lightly browned.  Remove from oven and immediately press the chocolate kiss on top of each cookie.  Cool 1 minute and then remove from cookie sheet to cooling rack.

Cool completely.  Makes about 4 dozen.

the cookies that I didnt slam a hersheys kiss into I made a slight well in the center with the back of my cookie scoop so I would have a place for the coconut curd. This would be what I would do for maybe some mini jelly beans to sit in the center.

There is so much beautiful Easter Candy to experiment with but I stuck with the Kisses. I like the plain chocolate with the coconut-I may be boring but they sure are a tasty combo.    I did find this wonderful product called Coconut Curd that I dolloped into the center of some of them and then topped with toasted coconut- very tasty also and coconutty!
